Doing it through the code isn't too hard, just a bit of trial and error, but to have a plugin that you just activate, switch over to it's options and enter in the category id for the gallery would be snug. My plugin idea was to turn the email address into an IMAGE so that it would be harder for spam harvesters to pick up.
